PUREFRUIT® Monk Fruit Extract is a versatile, calorie-free sweetener that blends well with other sweeteners. It has a two-year shelf life and clean taste.

Monk fruit grows on lush vines in the sub-tropical climate of Asian hillsides, where temperate conditions and elevation are ideal for growing this natural, great-tasting, zero-calorie product. PUREFRUIT® Monk Fruit Extract is available as a readily soluble powder for easy formulation. It is pH stable at low and neutral PH conditions, and is heat stable – making it a flexible, functional ingredient for use across formulations.

The fruit’s pulp contains sweet compounds called mogrosides, of which the compound, mogroside V, provides a desired sweet characteristic of 100 to 200 times the sweetness of sugar that allows for complete sugar reduction in certain foods and beverages.
